Yoy should go to Youtube and find short video demonstrating how to properly sharpen your Global knife set. I don’t fully agree with all of the knife sharpening techniques there but mostly good advise, grinding a fairly new knife first

is a

lazy way of decreasing the life of your knife but if you have a large shoulder on an heavily used blade it’s unavoidable to have to grid the knife on a wheel or belt grinder.
